A temaki does not wait for yakisoba. The right order reaches the right counter, and the table is served at the pace of the all-you-can-eat rounds, not everything at once.

## The lost round. In all-you-can-eat service, the waste arrives on a tray.

The table orders twenty pieces and eats twelve. The paper the server wrote on does not say who over-ordered or how much it cost. The salmon that comes back on the tray is margin going straight into the bin.

## Three things that change the counter.

## A night at the Japanese restaurant.

All-you-can-eat Saturday. 19:00 to 23:00. 14 tables, two sushi chefs at the counter, the hot kitchen full. Every round in step.

- 19:22: Table 05 opens. The QR code on the table starts all-you-can-eat service for 4 people.
- 19:40: The first round. Cold at the sushi counter, hot in the kitchen, the same tab.
- 20:35: Peak at the sushi bar. 32 pieces in the queue, with the time per order on the screen.
- 21:50: Table 05 closes. The bill per person comes out ready, with the drinks kept separate.
- 23:10: The house closes. The dashboard shows average consumption per all-you-can-eat cover and the margin on salmon.

At the end of the night, the all-you-can-eat service closes as a number, not as an impression.

## A Japanese restaurant has questions of its own.

- How does all-you-can-eat ordering work? All-you-can-eat comes in as an amount per person and the table orders each round by QR, within the house rules. Native control of repeats and round timing is on the product roadmap.
- Do the sushi bar and the hot kitchen see separate queues? Yes. The kitchen display routes by station: cold to the sushi counter, hot to the stove. Each screen shows only its own work, with the waiting time.
- Does the bill come out per person? It does. All-you-can-eat per head and individual consumption are kept apart on the same table. Closing splits it on its own, including the shared portion.
- Can I control the cost of the fish? You can, through the recipe card. Salmon has a cost per portion and the dashboard shows the margin per item, from the temaki to the combo platter.
- Does combo platter delivery go into the same operation? It does. The app order lands on the sushi bar kitchen display alongside the tables. The counter decides the order of work, not a tablet in the corner.
