## The order that comes back. A wrong pizza costs two.

The half and half written down on paper turns into a different pizza in the kitchen. Calabresa with chicken comes out as calabresa with tuna. The pizza comes back, the oven makes it again, the customer waits twice as long.

Then there is delivery, on a screen of its own away from the counter. When iFood fills up, somebody forgets to pass an order to the oven. The house loses the sale twice: on the remake, and on the customer who does not order again.

## Three things that change the batch.

- Half and half with no mistakes. Two toppings, stuffed crust, thin base. Each choice comes in as a modifier on the order, at the right price. The kitchen reads exactly what the customer asked for.
- The oven as a station. The kitchen display shows the oven queue in real time, with the time for each pizza. The pizzaiolo lines them up without any shouting and the sequence comes out in the right order.
- Delivery in the same queue. An iFood order lands straight on the kitchen display, together with the tables and the counter. One queue, one oven, no screen forgotten in a corner.

Friday peak. 18:00 to 23:00. A wood-fired oven, two pizzaiolos, half the orders on delivery. The queue moves on its own.

- 18:40: First peak. 12 orders in the oven queue, average time of 9 minutes.
- 19:25: iFood comes in. The app order lands on the kitchen display, in the same queue as the counter.
- 20:10: Table 07 orders half and half with stuffed crust. Right modifier, right price.
- 21:30: The driver leaves. Dispatch records the departure and the dashboard shows the time on the road.
- 23:05: The oven goes off. The day's dashboard shows sales by topping and by channel.

At the end of the night, you know which topping paid for the firewood.

## A pizzeria has questions of its own.

- How do you charge for half and half? You choose the rule: by the higher priced topping, or proportionally by half. The point of sale applies it on its own and the bill comes out right.
- Does it integrate with iFood? Yes. The iFood order goes straight to the kitchen display, in the same queue as the counter and the tables. The menu in the app pulls from Oasys, with no duplicate catalogue.
- Does it work for all-you-can-eat pizza service? It does. All-you-can-eat comes in as a fixed amount per person, and the toppings go to the kitchen display as orders from the table. The kitchen sees the sequence, you see consumption per table.
- What about keeping track of delivery drivers? A delivery order has a dispatch status, with a departure time and the time on the road on the dashboard. Managing your own fleet is on the product roadmap.
- Is the dough part of cost control? It is, through the recipe card. Flour, sauce and mozzarella have a cost per pizza. You see the margin on each topping, not only the sale.
- Does the system hold up on a busy Friday? It does. Ordering works offline if the network drops and rises when it comes back. The oven queue does not depend on the house wi-fi.
