# How much bread you throw away without noticing

A bakery is four businesses inside a single day. Planning production on gut feel is expensive, and the bill arrives as waste.

The bakery opens before dawn with bread and early coffee, fills up at the counter through the morning, turns into a lunch spot at midday and closes the afternoon with coffee and special orders. That is four different operations sharing the same oven, the same counter and the same register. When production is planned on gut feel, one thing is left over and another runs out.

## Why is bakery production so hard to get right?

Because each rhythm of the day has its own demand, and the decision about how much to make is taken early in the morning, before you know how the day will go. Making too much becomes rubbish at night. Making too little sends customers away in the middle of the morning. Both cost you, in opposite directions.

## What is invisible waste?

It is the margin you baked and threw away without counting it. A hundred extra loaves just to be safe, thirty that came back as leftovers, every day, all month long. Add the opposite as well: the sale that did not happen because you ran out. Neither one shows up in the sales report, but both come out of your profit.

## How do you produce from history instead of gut feel?

By looking at what each rhythm of the day actually sold, day after day, and letting that history guide the next day's production. The decision stops being a guess and becomes a reading. Waste falls, and what used to run out stops running out.

Oasys separates what each rhythm of the day sells and shows you that history, so you bake for what the bakery actually asks for, not for what it seems to ask for.
